Trending Grill Shorts

Ingredients

• 1 package soft mini tortilla bowls
• Oil
• 1/2 white onion, diced
• 1 lb lean ground beef
• Taco seasoning (two seasonings)
• 1 can red enchilada sauce
• 1 can black beans, rinsed and drained
• 1 can diced jalapenos
• Shredded cheese
• Shredded lettuce
• Jalapeno sour cream

Steps

1. Place the tortilla bowls into a baking pan.
2. Heat oil in a skillet and cook the diced onion until translucent.
3. Add the ground beef, season, and brown; drain excess grease.
4. Stir in the enchilada sauce, black beans, and diced jalapenos.
5. Bring to a simmer for a couple of minutes.
6. Scoop the meat mixture into each tortilla bowl.
7. Top with shredded cheese.
8. Bake at 350F for about 10 minutes until the cheese melts.
9. Top with shredded lettuce and drizzle with jalapeno sour cream.
