Lemon Pasta

Ingredients

Garlic
Parsley
Lemons
Olive oil
Pecorino Romano cheese
Pasta
Red pepper flakes
Butter
Pasta water

Steps

Mince garlic and parsley.
Zest the lemons, then slice and juice them all.
Combine the lemon juice with olive oil, pecorino Romano cheese and lemon zest; mix until incorporated, then taste and adjust.
Boil the pasta until al dente.
Add olive oil to a pan, toss in the garlic and red pepper flakes and infuse.
Add a little butter.
Add the pasta straight from the pot.
Pour in the lemon mixture and add a little pasta water to thicken.
Mix well, add parsley and serve.
