Cheesy One-Pan Instant Noodles

Ingredients

  • 1 medium onion, cubed
  • 1/2 red bell pepper, diced
  • 1 yellow pepper, diced
  • 2 tomatoes, diced
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1 pinch black pepper
  • 200 mL water
  • 2 packages instant noodles
  • 2 eggs, beaten
  • 150g grated mozzarella cheese
  • Oil

Steps

  1. Drizzle oil in a large skillet and add the cubed onion.
  2. Add the red bell pepper, yellow pepper, and tomatoes to the skillet.
  3. Stir in the tomato paste, salt, and black pepper with 100 mL of water.
  4. Add the instant noodles and another 100 mL of water; cook for 3 minutes.
  5. Stir until incorporated into the sauce.
  6. Add the beaten eggs and stir for another 3 minutes.
  7. Add the grated mozzarella and cook for another 3 minutes, then serve.
