- To taste Salt
- To taste Pepper
- To taste Onion powder
- To taste Garlic powder

- To taste Poultry seasoning (optional)

Steps
- Clean the chicken quarters by removing excess fat, feathers, and any extra slime. Cut away the back portion if it is not intended to be eaten.
- If the pieces are too large for serving, cut them into two pieces along the line of fat that runs down the side, cutting straight through the bone.
- Wash the cleaned chicken piece(s).
- Season the chicken with salt, pepper, onion powder, garlic powder, paprika, and any additional seasonings like poultry seasoning or adobo seasonings.
- Preheat your oven to 350°F (175°C).
- Place the seasoned chicken in a baking dish. Cover the dish tightly with aluminum foil.
- Bake for the first 45 minutes covered, allowing the steam from the chicken to create its own broth.
- After 45 minutes, carefully remove the aluminum foil and pour off any excess liquid/broth that has accumulated in the pan into a separate container (this can be frozen).
- Return the uncovered chicken to the oven and bake for an additional 30 minutes or until cooked through and the top is browned and crispy.
- Remove the baked chicken from the oven.
