  • As needed Chicken quarters or chicken legs
  • To taste Salt
  • To taste Pepper
  • To taste Onion powder
  • To taste Garlic powder
  • To taste Paprika
  • To taste Poultry seasoning (optional)
  • To taste Adobo seasonings (optional)

Steps

  1. Clean the chicken quarters by removing excess fat, feathers, and any extra slime. Cut away the back portion if it is not intended to be eaten.
  2. If the pieces are too large for serving, cut them into two pieces along the line of fat that runs down the side, cutting straight through the bone.
  3. Wash the cleaned chicken piece(s).
  4. Season the chicken with salt, pepper, onion powder, garlic powder, paprika, and any additional seasonings like poultry seasoning or adobo seasonings.
  5. Preheat your oven to 350°F (175°C).
  6. Place the seasoned chicken in a baking dish. Cover the dish tightly with aluminum foil.
  7. Bake for the first 45 minutes covered, allowing the steam from the chicken to create its own broth.
  8. After 45 minutes, carefully remove the aluminum foil and pour off any excess liquid/broth that has accumulated in the pan into a separate container (this can be frozen).
  9. Return the uncovered chicken to the oven and bake for an additional 30 minutes or until cooked through and the top is browned and crispy.
  10. Remove the baked chicken from the oven.
