- Put the sugar and water to melt.
- Wait until the sugar turns golden brown.
- Add the milk to the mixture.
- Wait for the sugar to fully dissolve into the milk, becoming uniform.
- While waiting, add the cinnamon sticks and cloves.
- Let the mixture rest until it boils.
- Cut the lime and prepare the eggs.
- Whip the egg whites until they are firm.
- Split the yolks from the egg whites (keep the yolks for later).
- Add the egg yolks little by little to the boiling milk mixture.
- Add the lime juice to curdle the milk.
- Give a quick swing and add the whipped egg whites.
- Let the ambrosia cook on low heat for a while, mixing the pan by holding it on its side and twisting to form characteristic lumps.
- Use a spoon to check if anything is stuck in the middle of the pan very lightly.
- After about 5 minutes, mix gently to incorporate the cooked egg whites with the rest of the mixture.
- Set the heat to medium.
