- 1 1/2 cups Tapioca flour (or tapioca starch)
- 1 Egg
- 1/4 cup Olive oil
- 2 3/4 cups Whole milk
- 3/4 cup Fresh grated cheddar cheese
- 1/2 teaspoon Salt

Steps
- Spray a muffin pan with cooking oil.
- In a food blender or using a whisk attachment, combine the tapioca flour, egg, olive oil, whole milk, fresh grated cheddar cheese, and salt.
- Blend or whisk until the mixture is smooth and the cheese is incorporated into the batter.
- Pour the batter into the greased muffin pan, filling each cup about 3/4 full.
- Bake in a preheated oven at 400 degrees Fahrenheit for around 20 minutes.
