- In a pot, combine the coconut water and agar powder. Add a pinch of salt to balance the creaminess.
- Add the coconut milk (using a 50:50 ratio with the coconut water) and sugar to taste.
- Add the pandan leaves to the mixture.
- Bring the liquid to a full boil, stirring frequently to ensure the agar agar is completely dissolved. This step confirms that the jelly will set properly.
- Remove from heat and keep the mixture hot for the second layer.
- Prepare the second layer using only coconut water, adding the agar powder and less sugar due to the natural sweetness of the coconut water.
- Add pandan leaves to this second pot and bring it to a boil, stirring frequently until dissolved.
- Begin building the layers: Divide the first mixture (coconut milk/water blend) into three equal parts. Pour these gently into your serving dish, avoiding bubbles.
- Place the dish in the refrigerator for five minutes to allow the bottom layer to set slightly; it should be warm but firm enough to hold its shape when tapped.
- Pour the second mixture (coconut water only) over the partially set first layer. Pour delicately, perhaps drizzling onto a corner, as this area sets from the outside in and is firmer.
- Allow the entire dessert to cool completely for approximately seven minutes or until ready to serve.
