  • As needed for setting Agar agar powder

Steps

  1. In a pot, combine the coconut water and agar powder. Add a pinch of salt to balance the creaminess.
  2. Add the coconut milk (using a 50:50 ratio with the coconut water) and sugar to taste.
  3. Add the pandan leaves to the mixture.
  4. Bring the liquid to a full boil, stirring frequently to ensure the agar agar is completely dissolved. This step confirms that the jelly will set properly.
  5. Remove from heat and keep the mixture hot for the second layer.
  6. Prepare the second layer using only coconut water, adding the agar powder and less sugar due to the natural sweetness of the coconut water.
  7. Add pandan leaves to this second pot and bring it to a boil, stirring frequently until dissolved.
  8. Begin building the layers: Divide the first mixture (coconut milk/water blend) into three equal parts. Pour these gently into your serving dish, avoiding bubbles.
  9. Place the dish in the refrigerator for five minutes to allow the bottom layer to set slightly; it should be warm but firm enough to hold its shape when tapped.
  10. Pour the second mixture (coconut water only) over the partially set first layer. Pour delicately, perhaps drizzling onto a corner, as this area sets from the outside in and is firmer.
  11. Allow the entire dessert to cool completely for approximately seven minutes or until ready to serve.
