- 2 cups (240g) All-purpose flour or Double Zero flour
- 3 Eggs (large)
- 1/2 teaspoon Salt
- 1 tablespoon Olive oil

- Dump the flour onto a clean counter and create a well in the middle.
- In the well, add the eggs, salt, and olive oil.
- Using a fork or bench scraper, start beating the ingredients together, drawing in some of the flour from the sides.
- Continue mixing until all the flour is incorporated into the eggs to form a dough.
- If the dough is too sticky, add up to 1/4 cup of flour and knead it in with a tablespoon at a time.
- Switch to hand kneading (or use a bench scraper) for 10 to 15 minutes until the gluten develops and the dough becomes smooth and elastic.
- If the dough is too dry, add up to 1/4 cup of flour; if it's too wet, you can add a teaspoon of olive oil to soften it.
- Let the dough rest on the countertop for 1 to 3 hours (or overnight in the refrigerator) wrapped in plastic or beeswax wraps.
