Grilled New York Strip Steak

- Pat the meat dry with paper towels to remove all moisture.
- Season the entire surface of the steak liberally with kosher salt, black pepper, and garlic powder. Rub the seasonings around the sides as well.
- Preheat your grill to high heat (around 550 degrees) until it is smoking and sizzling when you place the steak down.
- Place the seasoned steak on the hot grill, pressing it down for good contact.
- Grill for approximately 2 minutes and 30 seconds. Check for nice brown grill marks.
- Turn the steak slightly (about a 45-degree turn) to continue cooking.
- Grill for another 2 minutes and 30 seconds, then flip it over, pressing down again to ensure good contact.
- Continue grilling until the internal temperature reaches 115 degrees Fahrenheit. Pull the steak off the grill when it hits this mark (it will carry over about 10 degrees).
- Let the steak rest for at least 10 minutes before slicing.
