Jamaican Baked Chicken

Ingredients

  • amount used Legume thai (chicken)
  • 2 teaspoons Olive oil
  • 2 teaspoons All-purpose seasoning
  • 2 teaspoons Chicken seasoning
  • 1 teaspoon Black pepper
  • 1 teaspoon Small paprika
  • 1 small (about 1 teaspoon) Stock cube
  • 1 Tomato
  • 1 stalk Scallion
  • 1 Small onion
  • amount used (not all) Scotch bonnet pepper
  • at least 1 tablespoon Fresh thyme
  • 4 cloves Garlic
  • half teaspoon to at least one teaspoon Browning (or dark soya sauce)
  • at least 1 tablespoon Ketchup
  • amount used Pimento seed (or ground pimento)
  • 1 and a half teaspoons Ginger
  • 2 teaspoons Barbecue sauce
  • 1 teaspoon Sugar (brown or white)

Steps

  1. Wash, clean, and remove most of the fat from the chicken.
  2. In a bowl, add 2 teaspoons of olive oil to the chicken.
  3. Add 2 teaspoons of all-purpose seasoning, 2 teaspoons of chicken seasoning, 1 teaspoon of black pepper, 1 teaspoon of small paprika, and 1 small stock cube (about 1 teaspoon).
  4. Press the seasonings down onto the chicken.
  5. Add 1 tomato, 1 stalk of scallion, 1 small onion, a portion of scotch bonnet pepper, at least 1 tablespoon of fresh thyme, and 4 cloves of garlic to the bowl.
  6. Add half teaspoon to at least one teaspoon of browning (or dark soya sauce) to the chicken mixture.
  7. Add at least 1 tablespoon of ketchup to the mixture.
  8. Massage all seasonings and herbs over the chicken using your hands.
  9. Add more browning if desired for a darker color.
  10. Add pimento seed (or ground pimento).
  11. Place the seasoned chicken in an oven set to 200 degrees Celsius, uncovered, for at least 30 to 35 minutes.
  12. After removing the chicken from the oven, reserve all the liquid that has accumulated in the baking pan; this will be used for the sauce.
  13. In a separate pan, add 1 teaspoon of olive oil and sauté 1.5 teaspoons of ginger for a couple of seconds.
  14. Add all the reserved liquid from the chicken to the pan.
  15. Stir in at least 2 tablespoons of ketchup, 2 teaspoons of barbecue sauce (optional), and 1 teaspoon of sugar.
  16. Bring the mixture to a boil on medium heat and let it simmer for at least three minutes until thickened.
  17. Turn off the stove. Pour the finished sauce over the baked chicken.
  18. Return the chicken to the oven and bake for at least 15 minutes at 100 degrees Celsius.
  19. Brush the surface of the chicken with the sauce before putting it back in the oven.
