Jamaican Baked Chicken

Ingredients
- amount used Legume thai (chicken)
- 2 teaspoons Olive oil
- 2 teaspoons All-purpose seasoning
- 2 teaspoons Chicken seasoning
- 1 teaspoon Black pepper
- 1 teaspoon Small paprika
- 1 small (about 1 teaspoon) Stock cube
- 1 Tomato
- 1 stalk Scallion
- 1 Small onion
- amount used (not all) Scotch bonnet pepper
- at least 1 tablespoon Fresh thyme
- 4 cloves Garlic
- half teaspoon to at least one teaspoon Browning (or dark soya sauce)
- at least 1 tablespoon Ketchup
- amount used Pimento seed (or ground pimento)
- 1 and a half teaspoons Ginger
- 2 teaspoons Barbecue sauce
- 1 teaspoon Sugar (brown or white)

Steps
- Wash, clean, and remove most of the fat from the chicken.
- In a bowl, add 2 teaspoons of olive oil to the chicken.
- Add 2 teaspoons of all-purpose seasoning, 2 teaspoons of chicken seasoning, 1 teaspoon of black pepper, 1 teaspoon of small paprika, and 1 small stock cube (about 1 teaspoon).
- Press the seasonings down onto the chicken.
- Add 1 tomato, 1 stalk of scallion, 1 small onion, a portion of scotch bonnet pepper, at least 1 tablespoon of fresh thyme, and 4 cloves of garlic to the bowl.
- Add half teaspoon to at least one teaspoon of browning (or dark soya sauce) to the chicken mixture.
- Add at least 1 tablespoon of ketchup to the mixture.
- Massage all seasonings and herbs over the chicken using your hands.
- Add more browning if desired for a darker color.
- Add pimento seed (or ground pimento).
- Place the seasoned chicken in an oven set to 200 degrees Celsius, uncovered, for at least 30 to 35 minutes.
- After removing the chicken from the oven, reserve all the liquid that has accumulated in the baking pan; this will be used for the sauce.
- In a separate pan, add 1 teaspoon of olive oil and sauté 1.5 teaspoons of ginger for a couple of seconds.
- Add all the reserved liquid from the chicken to the pan.
- Stir in at least 2 tablespoons of ketchup, 2 teaspoons of barbecue sauce (optional), and 1 teaspoon of sugar.
- Bring the mixture to a boil on medium heat and let it simmer for at least three minutes until thickened.
- Turn off the stove. Pour the finished sauce over the baked chicken.
- Return the chicken to the oven and bake for at least 15 minutes at 100 degrees Celsius.
- Brush the surface of the chicken with the sauce before putting it back in the oven.
