Steps
- Render the smoked sausage (Tasso) in a pot until rendered down.
- Add all pork and render it down with the fat and juice created by the sausage.
- Hit the mixture with the Holy Trinity (onion, celery, bell pepper) and garlic. Brown this mixture.
- Continue to brown the base for about an hour or more, allowing it time to hydrate.
- Add Old Sauce and parsley; season generously using a two-step seasoning mix.
- Stir in cream of celery, cream of mushroom, and cream of chicken soup until desired consistency is reached.
- Add homemade onion stock to the mixture.
- Bring the jambalaya back to a rolling boil.
- Add the smoked sausage (Tasso) back into the pot.
- Cook for about two hours.
- Add the white rice and mix it in with the jambalaya base.
- Cover the pot and let the mixture simmer for 35-45 minutes, allowing the rice to float to the top.
