Steps

  1. Butter the kunafa pans with a thick coat of butter and molasses mixture.
  2. Spread the mixture evenly to the bottom of the pan, ensuring it extends slightly beyond the edges for a nice crust.
  3. Place the prepared pans in the refrigerator to set the softened butter/molasses coating.
  4. In a separate bowl, mix the remaining soft butter with the kadayıf dough until well combined (rubbing method).
  5. Grind or grate the cheese.
  6. Divide the dough mixture into two equal halves: one for the bottom layer and one for the top layer.
  7. Spread half of the mixed dough evenly across the pan to form the first layer.
  8. Place a layer of grated cheese over the dough.
  9. Cover with the remaining half of the dough mixture, pressing it down as much as possible, including the sides.
  10. Preheat your stovetop heat to medium-low and place the pans on the stove.
  11. Using a kitchen towel for grip, gently cook one side of the kunafa until it achieves a nice golden color (about 4-5 minutes).
  12. Carefully turn the pan over using the kitchen towel to flip the kunafa onto the other side.
  13. Continue cooking the second side until both sides are beautifully done and golden brown.
  14. Serve the warm Kunafa immediately, drizzling generously with syrup.
