Ingredients
- 160 grams Kadayıf dough (shredded thin dough)
- 80 grams Butter (room temperature)
- 50-60 grams Cheese (dil peyniri or similar unsalted cheese)
- As needed Sherbet
- 2 drops Molasses

Steps
- Butter the kunafa pans with a thick coat of butter and molasses mixture.
- Spread the mixture evenly to the bottom of the pan, ensuring it extends slightly beyond the edges for a nice crust.
- Place the prepared pans in the refrigerator to set the softened butter/molasses coating.
- In a separate bowl, mix the remaining soft butter with the kadayıf dough until well combined (rubbing method).
- Grind or grate the cheese.
- Divide the dough mixture into two equal halves: one for the bottom layer and one for the top layer.
- Spread half of the mixed dough evenly across the pan to form the first layer.
- Place a layer of grated cheese over the dough.
- Cover with the remaining half of the dough mixture, pressing it down as much as possible, including the sides.
- Preheat your stovetop heat to medium-low and place the pans on the stove.
- Using a kitchen towel for grip, gently cook one side of the kunafa until it achieves a nice golden color (about 4-5 minutes).
- Carefully turn the pan over using the kitchen towel to flip the kunafa onto the other side.
- Continue cooking the second side until both sides are beautifully done and golden brown.
- Serve the warm Kunafa immediately, drizzling generously with syrup.
