Ingredients
- Diced onion or shallot
- Garlic
- Extra virgin olive oil
- Calabrian chili paste
- Chopped sun-dried tomatoes
- Tomato paste
- Vegetable broth (chicken-style veggie broth)
- Cans of butter beans (rinsed well)
- Italian seasoning
- Kale
- Homemade cashew cream
- or nutritional yeast Vegan parm cheese
- Fresh basil
- Fresh lemon juice

Steps
- Sauté diced onion or shallot with garlic in extra virgin olive oil.
- Add Calabrian chili paste for a little kick.
- Add chopped sun-dried tomatoes and tomato paste, cooking until the tomato paste darkens up a little bit for the best flavor.
- Add vegetable broth and two cans of butter beans that have been rinsed really well. (You can use other kinds of beans like chickpeas or white beans).
- Add Italian seasoning and kale, letting everything simmer for a bit to let the kale wilt down.
- Stir in homemade cashew cream and vegan parm cheese (or nutritional yeast).
- Finish with lots of fresh basil and a squeeze of fresh lemon juice.
