Milona with Mushroom Sauce

Ingredients

  • 1 pound Ground meat (mixture of pork and beef or chicken and beef)
  • 1 whole egg Egg
  • Half a medium onion Diced onion
  • To taste Salt and pepper
  • A couple of tablespoons Bread crumbs
  • As needed for cooking and sautéing Oil (or butter/lard)
  • 1 tablespoon Butter
  • A little bit (for forming patties) Water
  • 8 ounces Mushrooms
  • A couple Bay leaves
  • A few Pepper corns
  • Whole or a small dash of ground spice Allspice berries (or ground allspice)
  • 2 to 3 cups Water (for sauce)
  • A couple of tablespoons All-purpose flour
  • Half a cup Cold water (for thickening sauce)
  • To garnish Green parsley

Steps

  1. Start by preparing the meat patties: In a bowl, combine 1 pound of ground meat with 1 whole egg, half a medium diced onion (sautéed in grease/oil), salt, pepper, and a couple of tablespoons of bread crumbs.
  2. Mix all ingredients thoroughly until combined. To check for seasoning, form a small patty and fry it up to taste; add more salt or pepper if needed.
  3. Heat oil and 1 tablespoon of butter in a pan over low heat. Wet your hands with warm water to prevent the meat from sticking.
  4. Form the mixture into oval-shaped patties (mini meatloaves) using an ice cream scoop or measuring cup for consistent size, ensuring they are not too thick.
  5. Place the formed patties in the heated oil/butter and cook them on low heat until they have a little color. You will need to do this in batches.
  6. While the first batch of meat cooks, prepare the mushroom sauce: In another pan, add 1 tablespoon of butter. Add the mushrooms (8 ounces) along with salt, bay leaves, pepper corns, and allspice berries.
  7. Sauté the mushrooms until most of their moisture has evaporated and they have a little color on the edges.
  8. Add 2 to 3 cups of water to the pan with the mushrooms. Bring it to a simmer and let it cook for about 20-30 minutes, allowing the meat juices to flavor the sauce.
  9. Once the patties are cooked through (or after they have been simmering in the liquid), add them into the mushroom sauce to finish cooking/simmering.
  10. To thicken the sauce, whisk together a couple of tablespoons of all-purpose flour with half a cup of cold water. Pour this mixture back into the pan and bring it to a boil while stirring constantly until the sauce is thick and creamy.
  11. Season the finished sauce with pepper and garnish with green parsley before serving.
