Potato Dumplings (Kopytka)
4 ingredients · 13 steps · from Polish Your Kitchen
Steps
- Peel, dice, and boil the potatoes in salted water.
- Mash the warm boiled potatoes thoroughly in a pot.
- Transfer the mashed potatoes to a bowl while they are still warm.
- Add 1 cup of flour, 1 teaspoon of salt, and 1 egg into the potato mixture.
- Swirl the egg until the yolk breaks, then fold all ingredients together until a soft dough forms.
- Transfer the dough onto a floured board.
- Roll the dough out into a long log, rolling it to your desired thickness (about half an inch).
- Using a knife, cut the log into pieces at an angle to create the dumplings.
- Fill a pot with water and add a splash of oil and 1 teaspoon of salt.
- Bring the water to a boil over medium-low heat, ensuring there are only tiny bubbles (not a rolling boil).
- Gently drop the dumplings into the boiling water, using the rings of oil to help prevent sticking.
- Twist or stir the pot/water to keep them from sticking to the bottom.
- Allow the dumplings to cook until they float to the surface and then continue cooking for about two minutes to ensure they are cooked through on the inside.
