Steps
- Heat up oil and brown the ground beef.
- Add half of a packet of taco seasoning to the cooked meat, mix well.
- Stir in one can of refried beans until fully incorporated. Close the mixture and let it cook through.
- To make the queso sauce, combine 2 tablespoons of butter and 2 tablespoons of flour in a saucepan.
- Slowly whisk in 1 cup of milk to create a roux.
- Continue heating and whisking until the mixture thickens. Add taco seasoning for flavor.
- Remove from heat and stir in about 1 cup of spicy cheddar cheese, followed by the onion white cheddar cheese. Mix until melted.
- If the queso is too thick, add a touch more milk to loosen it up.
- Add a dash of milk and reheat the finished queso sauce before assembly.
- Preheat your oven to 375°F (implied by 'gazy' which likely means 'lazy' or referring to an oven setting).
- Spread the first layer of tortilla chips evenly across the baking sheet.
- Distribute the seasoned ground beef, pickled jalapeños, and both types of cheese over the chips in a relatively even manner.
- Add more layers of chips in the middle, creating a 'mountain' effect. Repeat the process by adding meat, pickled jalapeños, and more cheese to these central layers.
- Place plain cheddar cheese on top of the main structure before baking.
- Drizzle the prepared queso sauce over the entire nacho mountain.
- Bake until everything is hot and melted.
- Once out of the oven, layer the red onion, tomatoes, avocado, crema, and cilantro on top.
