  • a generous portion Pecorino cheese
  • to taste Black pepper

Steps

  1. Bring a small amount of water to a boil and add a little salt.
  2. Cook the pasta according to package directions (approximately 5-6 minutes).
  3. In a separate bowl, mix the Pecorino cheese with black pepper and a little bit of hot pasta cooking water until it forms a creamy consistency, similar to yogurt.
  4. Add more Pecorino and more spicy pepper if desired for extra flavor.
  5. Toss the cooked pasta in the cream mixture (Cacio e Pepe) over low heat. The residual heat from the pasta will create the final sauce.
  6. Continue tossing until a creamy, emulsified sauce forms that coats the pasta.
