- Bring a small amount of water to a boil and add a little salt.
- Cook the pasta according to package directions (approximately 5-6 minutes).
- In a separate bowl, mix the Pecorino cheese with black pepper and a little bit of hot pasta cooking water until it forms a creamy consistency, similar to yogurt.
- Add more Pecorino and more spicy pepper if desired for extra flavor.
- Toss the cooked pasta in the cream mixture (Cacio e Pepe) over low heat. The residual heat from the pasta will create the final sauce.
- Continue tossing until a creamy, emulsified sauce forms that coats the pasta.
