Sweet and Sour Chicken

  • some Chicken breasts
  • some Salt
  • some Black pepper
  • some All-purpose seasoning or mix season
  • some Paprika
  • a bit of Cajun garlic powder
  • a bit of Onion powder
  • some Flour
  • some Baking powder
  • some Cornstarch
  • some Water
  • some Red bell peppers
  • some Yellow bell peppers
  • some Green bell peppers
  • some Sugar
  • some Ketchup
  • some Pineapple juice
  • some Vinegar
  • a bit of Dark soy sauce
  • some Cooking oil (for frying)
  • some Garlic

Steps

  1. Cut chicken breasts into bite-size pieces.
  2. Season the chicken with salt, black pepper, all-purpose or mix seasoning, paprika, cajun garlic powder, and onion powder; mix together.
  3. In a container, mix flour, baking powder, and cornstarch.
  4. Add water to the dry mixture to create a thick batter.
  5. Dip the seasoned chicken into the batter and mix everything together.
  6. Set the chicken aside to marinate so the cornstarch can work its magic.
  7. Chop red, yellow, and green bell peppers.
  8. In a container, add sugar and ketchup for sweetness and texture.
  9. Add pineapple juice and vinegar for sourness, and dark soy sauce for color; mix together to create the sweet and sour sauce.
  10. Heat cooking oil in a pot over medium heat until hot.
  11. Fry the chicken pieces until they are really crispy and golden (no more than five minutes).
  12. Remove the fried chicken from the oil and drain excess oil.
  13. Remove the oil from the pot and add about one to two tablespoons of the same oil.
  14. Add garlic, onion, and bell peppers to the hot oil.
  15. Sauté for about 30 seconds to a minute.
  16. Add fresh pineapple slices to the pot.
  17. Pour in the sweet and sour sauce (made from sugar, ketchup, pineapple juice, vinegar, and dark soy sauce).
  18. Simmer for about one minute.
  19. Add the fried chicken back into the pot.
  20. Mix everything together until the chicken is well coated in the sweet and sour sauce.
