- In a small bowl or large measuring cup, mix together the olive oil, green za'atar spice mix, finely ground salt, and freshly grated garlic to create the marinade mixture.
- Preheat the oven to 400°F (200°C).
- Rinse chicken thighs in a light vinegar bath.
- Pat dry both sides of all chicken thighs with a paper towel.
- Drop a bit of za'atar oil mixture on the bottom of a deep-sided bowl or casserole dish and coat one side of each chicken thigh, then flip to coat the other side. Repeat until all thighs are coated.
- Prepare cauliflower by cutting it into large florets.
- Pour about 1/3 of the za'atar oil mixture over the cauliflower and toss to lightly coat.
- Distribute the coated cauliflower on a parchment-lined rimmed baking sheet.
- Nestle the prepared chicken thighs between the cauliflower.
- Drizzle the remaining za'atar oil over the chicken thighs.
- Transfer the sheet pan into the middle position of the preheated oven and bake for 35 to 40 minutes, or until the internal meat temperature is 165°F (74°C) and the outer skin is golden brown.
- Remove from the oven and let rest for a few minutes before serving.
