Beef and Rice Enchilada Skillet

Ingredients

  • 2 cups Minute Rice
  • 1 tbsp Tomato Chicken Bouillon Powder
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Ground Cumin
  • to taste Salt and Pepper
  • 1 pound Lean Ground Beef
  • 1 3/4 cups Water
  • 1 1/2 cups Enchilada Red Sauce
  • 1 1/2 to 2 cups Mild Cheddar Cheese (or Colby Jack/Mozzarella)
  • for garnish Green Scallions

Steps

  1. In an electric skillet, brown the lean ground beef. Season with a little garlic powder, onion powder, and a pinch of salt.
  2. Once the ground beef is cooked through and browned, add 2 cups of Minute Rice to the pan.
  3. Add the seasoning blend: 1 tbsp tomato chicken bouillon powder, 1 tsp garlic powder, 1 tsp onion powder, and 1/2 tsp ground cumin. Add salt and pepper to taste.
  4. Pour in 1 3/4 cups of water and mix everything around until a Mexican rice mixture with ground beef is formed.
  5. Top the mixture with 1 1/2 cups of enchilada red sauce.
  6. Add 1 1/2 to 2 cups of shredded mild cheddar cheese (or preferred substitute).
  7. Let the skillet cook for an additional 10 minutes, lowering the temperature so the dish does not burn.
  8. Garnish with green scallions before serving.
