Beef and Rice Enchilada Skillet

- 2 cups Minute Rice
- 1 tbsp Tomato Chicken Bouillon Powder
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1/2 tsp Ground Cumin
- to taste Salt and Pepper
- 1 pound Lean Ground Beef
- 1 3/4 cups Water
- 1 1/2 cups Enchilada Red Sauce
- 1 1/2 to 2 cups Mild Cheddar Cheese (or Colby Jack/Mozzarella)
- for garnish Green Scallions

Steps
- In an electric skillet, brown the lean ground beef. Season with a little garlic powder, onion powder, and a pinch of salt.
- Once the ground beef is cooked through and browned, add 2 cups of Minute Rice to the pan.
- Add the seasoning blend: 1 tbsp tomato chicken bouillon powder, 1 tsp garlic powder, 1 tsp onion powder, and 1/2 tsp ground cumin. Add salt and pepper to taste.
- Pour in 1 3/4 cups of water and mix everything around until a Mexican rice mixture with ground beef is formed.
- Top the mixture with 1 1/2 cups of enchilada red sauce.
- Add 1 1/2 to 2 cups of shredded mild cheddar cheese (or preferred substitute).
- Let the skillet cook for an additional 10 minutes, lowering the temperature so the dish does not burn.
- Garnish with green scallions before serving.
