Steps
- Cut the onion into cubes.
- Peel and cut the apple into quarters and then smaller pieces.
- Heat a large pot over medium heat, adding duck fat (or other oil/fat).
- Add the onions to the hot fat and sauté until they become translucent, stirring occasionally.
- Remove the outer leaves from the red cabbage. Cut the core at an angle and then slice the cabbage into small, thin strips.
- Add the shredded cabbage to the pot with the onions.
- Increase the heat slightly.
- Add the apples, bay leaf, whole cloves, sugar, balsamic vinegar, salt, and water to the pot.
- Cover the pot and let it simmer for at least 45 minutes (or up to an hour), checking occasionally to ensure it is not burning on the bottom.
- After simmering for about two hours, adjust the flavor by adding more salt, sugar, or vinegar as desired.
