Braised Red Cabbage

  • cubed Onion
  • peeled and cut into pieces Apple
  • as needed Duck fat (or other oil/fat)
  • 1 Bay leaf
  • some Whole cloves
  • a little bit Sugar
  • added to taste Balsamic vinegar

Steps

  1. Cut the onion into cubes.
  2. Peel and cut the apple into quarters and then smaller pieces.
  3. Heat a large pot over medium heat, adding duck fat (or other oil/fat).
  4. Add the onions to the hot fat and sauté until they become translucent, stirring occasionally.
  5. Remove the outer leaves from the red cabbage. Cut the core at an angle and then slice the cabbage into small, thin strips.
  6. Add the shredded cabbage to the pot with the onions.
  7. Increase the heat slightly.
  8. Add the apples, bay leaf, whole cloves, sugar, balsamic vinegar, salt, and water to the pot.
  9. Cover the pot and let it simmer for at least 45 minutes (or up to an hour), checking occasionally to ensure it is not burning on the bottom.
  10. After simmering for about two hours, adjust the flavor by adding more salt, sugar, or vinegar as desired.
