Steps
- Season the fish by chopping cilantro and mixing it with lime juice, salt, pepper, and a little garlic.
- Place the seasoned fish in the pan to marinate for a short time.
- Make some small cuts (slits) on the fish so that the sauce can penetrate the flesh.
- Cut two tomatoes. To remove the skin: place them in a pan with palm oil, add a little garlic and paprika, turn on the heat, and cook for a few seconds until the skin peels off.
- Peel and cut the remaining tomato into four pieces.
- Chop an onion (cut it into large pieces).
- Add the peeled tomatoes, chopped onion, palm oil, garlic, and paprika to the pan.
- Cook for a few minutes until the vegetables soften.
- Stir in the coconut milk.
- Once the stew is simmering, add the shrimp. Cook for about five minutes so they do not become chewy.
