Chicken Gumbo

  • 3/4 cup Olive oil
  • 1 1/2 cups Flour
  • about 1 cup Onion (large)
  • 1 large clove, chopped finely Garlic cloves
  • 1 full cup Water
  • 2 tablespoons Worcestershire sauce
  • about 1 teaspoon Hot sauce (Tabasco or similar)
  • not specified Sausage (Andouille type)
  • 1-2 pounds, cut into pieces including drumsticks and second joints Chicken
  • about 2.5 teaspoons Salt

Steps

  1. In a pot, heat the olive oil over medium heat.
  2. Add the flour to the hot oil and cook until it forms a roux that resembles 'Dutch chocolate bread' (a deep brown color).
  3. Stir in the chopped onion and cook until softened and translucent.
  4. Add the minced garlic and continue cooking until clear.
  5. Pour in the water, stirring constantly to mix with the roux. Bring the mixture to a boil while watching carefully to prevent burning.
  6. Once boiling, add the Worcestershire sauce and hot sauce (Tabasco or similar).
  7. Stir in the sausage and chicken pieces into the pot.
  8. Add salt to taste (about 2.5 teaspoons initially) and stir well.
  9. Cover the pot and let it simmer for about an hour.
  10. Taste and adjust seasoning as needed.
