Chipotle Salsa Roja

Ingredients

  • 5 Roma tomatoes
  • 5 Serrano peppers
  • about a handful Cilantro
  • 1/4 to 1/3 of an onion Onion
  • 2 peppers (one for the initial liquid puree, one added later) Chipotle in adobo
  • whole can Diced canned tomatoes
  • 1 teaspoon Salt

Steps

  1. Cut the Roma tomatoes into quarters.
  2. In a blender, combine a few of the tomatoes with some liquid from the can and one chipotle pepper.
  3. Add some of the serrano peppers to this initial mixture.
  4. Stir in 1 teaspoon of salt to create a small liquid puree that allows the salt to dissolve completely.
  5. Once the initial liquid puree is made, add the remaining ingredients: all the cilantro and the whole can of diced tomatoes.
  6. Add one more chipotle pepper into the blender.
  7. Pulse the mixture in the blender until it reaches your desired consistency; pulse a little at a time to allow the salsa to settle back down.
