Red Meat Market Marinade

Ingredients

  • amount Orange juice
  • amount Pineapple juice
  • amount Lime juice
  • 1 tbsp Apple cider vinegar
  • 1/4 cup Olive oil
  • 1 tbsp Salt
  • 1 tbsp Black pepper
  • amount Garlic
  • amount Onion
  • amount Oregano
  • amount Cumin
  • 2 tbsp Smoked paprika
  • 2 tsp Chili powder
  • 3 tbsp Achiote

Steps

  1. Combine the orange juice, pineapple juice, lime juice, apple cider vinegar, olive oil, salt, black pepper, garlic, onion, oregano, cumin, smoked paprika, chili powder, and achiote in a blender.
  2. Blend all ingredients until smooth. (Optional: Add water or beer to adjust consistency.)
  3. Place the meat strips into a glass bowl or container.
  4. Pour approximately 4-5 cups of the marinade over the meat.
  5. Rub the marinade thoroughly onto both sides of the meat, ensuring it is well coated.
  6. Cover the marinated meat with plastic wrap and place it in the refrigerator for marinating. (Marinate thin cuts like fajitas/steaks for 2 to 4 hours; overnight is better.)
  7. Preheat grill to 550 degrees F.
  8. Clean the grill using a halved onion, making crisscross patterns on the grates and rotating until clean.
  9. Place meat strips onto the hot grill.
  10. Season with extra salt/seasonings as desired.
  11. Cook for approximately 3 minutes per side over high heat. Use the 'flippity flip' method (flip frequently).
  12. Once initial searing is achieved, close the lid to maintain temperature and allow moisture to cook into the meat.
  13. Flip the meat once more after a few minutes of closed-lid cooking.
  14. Continue cooking for an additional 2 to 4 or 5 minutes per side until desired internal temperature (e.g., 135°F - 160°F) is reached.
