Ingredients
- 1 tablespoon Coconut oil
- as needed Chives (or scallions)
- 1 clove Garlic
- 1 to 3 Thyme sprigs
- to taste Fresh brown black pepper
- as needed Lemon zest
- as needed Raisins
- as needed Dried pineapple
- 2 cups Basmati rice (washed)
- 3 3/4 cups Water
- 2 tablespoons Coconut cream
- to taste Salt (sea salt recommended)

Steps
- Heat the coconut oil in a pot over low heat.
- Add chives, garlic, and thyme sprigs to the pot. Cook for about 3 minutes on low heat to infuse flavor.
- Stir in fresh brown black pepper and lemon zest.
- Add raisins and dried pineapple; stir until the dried fruit softens.
- Add the washed basmati rice directly into the pot, stirring to coat each grain with the flavored coconut oil mixture.
- Increase heat to medium-high. Pour in 3 3/4 cups of water (or substitute vegetable/chicken stock).
- Stir in 2 tablespoons of coconut cream and salt.
- Bring the liquid to a boil, then reduce the heat to low and cover with a lid.
- Simmer for 12 minutes. Turn off the stove, put the lid back on, and let it rest for an additional 5 to 7 minutes (or 15 minutes if using a metal pot).
- Remove the lid and fluff the rice.
