Creamy Cajun Chicken

Ingredients
- about 3 medium chicken breasts
- to taste salt
- to taste ground black pepper
- 1 teaspoon of two Cajun seasoning
- as needed for frying oil
- about 1 tablespoon butter
- 3 chopped garlic cloves
- half a small, chopped small onion
- 1 celery stalk
- about half of a small (red or green) bell pepper
- a quarter cup sun-dried tomatoes
- as needed chicken stock
- as needed heavy cream
- to taste additional pepper
- to taste additional Cajun seasoning

Steps
- Season the chicken breasts with salt, ground black pepper, and 1 teaspoon of two of Cajun seasoning.
- Heat oil in a skillet over medium-high heat. Place the seasoned chicken in the pan and fry until cooked through and has a nice sear on both sides.
- Remove the cooked chicken from the skillet and set it aside on a plate.
- In the same pan, melt about 1 tablespoon of butter. Add the chopped garlic and half a small chopped onion, and sauté for 30 seconds to 1 minute until fragrant.
- Add the celery stalk, bell pepper (about half of a small), and quarter cup of sun-dried tomatoes to the pan. Stir around and let it cook down over medium heat for about four or five minutes.
- Pour in chicken stock and heavy cream into the skillet. Season with additional pepper and Cajun seasoning, then bring the mixture to a boil.
- Return the cooked chicken breasts to the pan. Let the sauce simmer while spooning some of the sauce over the top for another 5 to 10 minutes.
- Once finished, turn off the heat.
