Steps
- Set a pot on medium heat and add oil. Wait for it to heat up.
- Add half of a white onion and half of a bell pepper, then sauté for 3 minutes.
- Add one pound of lean ground beef and season with two garlic cloves, 2 tbsp of garlic salt, 1 tsp of onion powder, 1 tsp of chili powder, 1 tsp of paprika, 1 tsp of oregano, 1 tsp of chili flakes, and 1 tsp of ground cumin.
- Cook the meat for about 6 minutes.
- Add a couple dashes of Maggi seasoning, 1 tbsp of tomato paste, 10 oz of diced tomatoes and green chile (drained), and half a cup of sour cream. Mix everything together.
- Add three cups of beef broth along with 8 oz of pasta (shells). Mix everything together and bring it to a simmer.
- Taste the mixture for salt and add black pepper if needed.
- Reduce the heat to low, cover the pot, and let it cook for 5 minutes.
- After 5 minutes, open the pot and mix gently to ensure the pasta doesn't stick to the bottom. Cover again and allow it to continue cooking for another 5 minutes.
- Once the pasta is soft, turn off the heat.
- Add about three cups of cheese and mix until melted.
- Serve the pasta topped with cilantro or avocado (optional).
