Crispy Baked Chicken Thighs

Ingredients

  • 2 Organic chicken thighs
  • 2 tablespoons Avocado oil
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 1/2 teaspoons Paprika
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Steps

  1. Take the chicken thighs out of the fridge about 20 minutes before cooking to bring them to room temperature.
  2. Preheat your oven to 425 degrees Fahrenheit.
  3. In a small bowl, combine all spices: two teaspoons of garlic powder, two teaspoons of onion powder, 1 1/2 teaspoons of paprika, one teaspoon of oregano, one teaspoon of thyme, one teaspoon of salt, and a half a teaspoon of black pepper.
  4. Use paper towels to blot the chicken thighs dry with a paper towel or two.
  5. Add two tablespoons of avocado oil to the chicken and stir until well-coated.
  6. Add about 2/3 of the spices to the chicken. Stir, ensuring all thighs are coated, making sure to get under the skin as well.
  7. Place a rack on top of your baking sheet to allow juices to drip down and air to circulate around the chicken.
  8. Transfer the seasoned chicken thighs onto the rack on the baking sheet.
  9. Sprinkle the remaining 1/3 of the spices on top of the chicken thighs, using fingers to pat them in for a golden crispy skin.
  10. Bake the chicken in the middle of your oven for 35 to 40 minutes. You may turn on the top broiler for one or two minutes if desired.
  11. Remove the chicken from the oven when it reaches an internal temperature of 160 degrees Fahrenheit, allowing it to rest and continue cooking until it reaches 165 degrees Fahrenheit.
