Crockpot Sausage and Potatoes

- as needed Baby yellow potatoes (or new/red/russet)
- 16 oz Smoked sausage (classic or preferred type)
- 2 Yellow onions
- 1 can (approx. 15 oz) Petite diced tomatoes (regular or favorite flavor)
- 1 tsp Minced garlic
- 1 tsp Salt
- 1 tsp Italian seasoning
- 1 cup Chicken broth

Steps
- Remove the steamable insert from your crockpot and use only the pot.
- Wash, drain, and cut baby yellow potatoes (or preferred variety) in half. Add them to the crockpot.
- Cut smoked sausage into 1-inch bite-sized pieces and place it on top of the potatoes.
- Peel and quarter two yellow onions. Remove the middle bulb section and layer the onion pieces over the ingredients in the crockpot.
- Add one can (approx. 15 oz) of petite diced tomatoes to the crockpot.
- Sprinkle a teaspoon each of minced garlic, salt, and Italian seasoning over the ingredients.
- Pour one cup of chicken broth into the crockpot.
- Cover the crockpot with its lid.
- Cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are fork tender. Check tenderness by stabbing a potato with a fork.
