Crockpot Sausage and Potatoes

Ingredients

  • as needed Baby yellow potatoes (or new/red/russet)
  • 16 oz Smoked sausage (classic or preferred type)
  • 2 Yellow onions
  • 1 can (approx. 15 oz) Petite diced tomatoes (regular or favorite flavor)
  • 1 tsp Minced garlic
  • 1 tsp Salt
  • 1 tsp Italian seasoning
  • 1 cup Chicken broth

Steps

  1. Remove the steamable insert from your crockpot and use only the pot.
  2. Wash, drain, and cut baby yellow potatoes (or preferred variety) in half. Add them to the crockpot.
  3. Cut smoked sausage into 1-inch bite-sized pieces and place it on top of the potatoes.
  4. Peel and quarter two yellow onions. Remove the middle bulb section and layer the onion pieces over the ingredients in the crockpot.
  5. Add one can (approx. 15 oz) of petite diced tomatoes to the crockpot.
  6. Sprinkle a teaspoon each of minced garlic, salt, and Italian seasoning over the ingredients.
  7. Pour one cup of chicken broth into the crockpot.
  8. Cover the crockpot with its lid.
  9. Cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are fork tender. Check tenderness by stabbing a potato with a fork.
