- 3 Large eggs
- some Room temperature milk
- a little bit Vanilla extract
- a pinch Salt
- some Flour
- 2 or 3 tablespoons Clarified butter
- as needed Melted butter (for finishing)
- juice of half a lemon Lemon juice
- generous dusting Powdered sugar

Steps
- Crack three room temperature large eggs into a blender.
- Add some room temperature milk, vanilla extract, and a pinch of salt to the blender.
- Pour in flour.
- Blend on high speed until completely smooth. If necessary, stop halfway through and scrape down with a spatula to ensure no clumps remain.
- Preheat a 10-in cast iron skillet on very high heat.
- When the pan is extremely hot, pour in about 2 or 3 tablespoons of clarified butter.
- Pour the batter right into the center of the preheated pan.
- Carefully transfer the pan to a 425° oven and bake for 20 to 25 minutes, or until well browned and extremely poofy.
- Once out of the oven, drizzle on and brush over some melted butter.
- Follow with the juice of half a lemon.
- Finish off with a generous dusting of powdered sugar.
