Jamaican Beef Stew

Ingredients

  • 2 pounds Beef
  • to taste Salt
  • optional Dry seasoning
  • to taste All-purpose seasoning
  • to taste Green seasoning (blended scallion, thyme, garlic, onion)
  • a bit Fresh ginger
  • some Crushed pimento seeds
  • some Browning (caramelized sugar)
  • a bit Cooking oil
  • a bit Sugar
  • as needed Hot water
  • to taste Ketchup
  • some Chopped carrots
  • some Bell peppers (chopped)
  • some Scallions (chopped)
  • to taste Thyme
  • one Whole pepper

Steps

  1. Cut the beef into desired size.
  2. Season the beef with salt, dry seasoning (optional), all-purpose seasoning, green seasoning (blended scallion, thyme, garlic, onion), fresh ginger, crushed pimento seeds, and browning (caramelized sugar).
  3. Mix well to coat the beef in the seasonings and herbs.
  4. Cover the seasoned beef and allow it to marinate for at least one hour.
  5. In a pot, heat cooking oil and add some sugar. Stir until the sugar begins to caramelize.
  6. Add the marinated beef to the pot with the caramelized sugar.
  7. Cook uncovered for a few minutes to allow the beef to produce its own juices and create liquid in the sauce.
  8. Allow the meat to simmer in its own sauce for a few more minutes until the flavors are locked in.
  9. Pour in hot water, ensuring not to drop the cooking temperature.
  10. Cover the pot and cook on the lowest heat until the beef is nice and tender (approximately 15 minutes).
  11. Once the beef is tender, add ketchup, chopped carrots, bell peppers, scallions, thyme, and a whole pepper.
  12. Add salt if needed to adjust flavor.
  13. Cover the pot and allow it to simmer on the lowest heat for another 15 to 20 minutes.
