Jamaican Lentil Curry

Ingredients

  • Light vegetables and aromatics
  • Spices (including curry powder, fenugreek, allspice, pimento berries, star anise)
  • Brown lentils (or green/black lentils)
  • Scotch bonnet pepper or habanero (whole)
  • Coconut milk
  • Peanut butter

Steps

  1. Add light vegetables and aromatics to the pot.
  2. Toss in spices to toast, paying close attention while cooking them until fragrant.
  3. Add brown lentils (or green/black lentils) to the pot.
  4. Place a whole scotch bonnet pepper or habanero at the top of the mixture for flavor and heat.
  5. Cook the ingredients with coconut milk.
  6. Stir in peanut butter.
