Jamaican Steamed Cabbage

Ingredients

  • 1.5 tablespoons Olive oil (or vegetable/coconut oil)
  • couple pieces Onion
  • some Carrots
  • 3 Garlic cloves
  • a couple of pinches Black pepper (fresh ground)
  • optional Pimentel allspice berries
  • some Fresh thyme
  • 3 slices (from scotch bonnet pepper, no seeds) Scallion heat
  • more Carrots
  • 1 Green bell pepper
  • 1 Red bell pepper
  • some (to taste) Salt
  • 1 (optional) Vegetable bouillon cube
  • a lot Cabbage

Steps

  1. Heat a deep pan over medium heat and add 1.5 tablespoons of olive oil.
  2. Add the onion, carrots, garlic cloves, black pepper, pimentel allspice berries (optional), fresh thyme, and scallion heat to the pan.
  3. Lower the heat to low and allow the ingredients to sauté for a little while until softened.
  4. Turn up the heat to medium-low. Add more carrots, green bell pepper, and red bell pepper.
  5. Stir in salt (not too heavy) and one optional vegetable bouillon cube.
  6. Add all of the cabbage into the pan.
  7. Lower the heat and allow the cabbage to cook down slightly before mixing it up.
  8. Turn around and mix everything together nicely.
  9. Put the lid on the pan and let the mixture steam for about six minutes, stirring a couple of times during this time.
  10. Taste the dish for salt and adjust as needed.
