Ingredients
- 2 Tomatoes (plum or beef type)
- 3-4 Green peppers (light green/sweet)
- 1/2 Red pepper (optional, sweet capia)
- 2 tbsp Butter
- 3 tbsp Olive oil
- to taste Salt
- 3-4 Eggs
- 3 slices Kashar cheese (or similar melting cheese)

Steps
- Dice the tomatoes and green peppers. If using a thick tomato, peel it first.
- Heat butter and olive oil in a medium-sized pan over medium heat.
- Sauté the diced peppers with the lid closed to help soften them with steam, then fry for a few more minutes until soft.
- Add the diced tomatoes and salt to the pan. Close the lid again and let it cook together for about 4-5 minutes until softened.
- Gently mash the cooked tomatoes and peppers with a spoon or potato masher to create a sauce-like texture, being careful not to overmash.
- Lightly whisk the eggs in a small bowl (do not overmix).
- Crack the prepared eggs directly into the menemen mixture.
- Tear the kashar cheese slices and add them to the pan.
- Close the lid again and cook until the cheese is melted.
