Mexican Chicken Casserole

Ingredients
- 3 cups Chicken (rotisserie or breast)
- 1 can Cream of mushroom soup
- 1 can Cream of chicken soup
- 1 1/2 cups salsa OR 10 oz can Ro-Tel Salsa or Ro-Tel (diced tomatoes with green chilies)
- 14-15 oz can Whole kernel corn, drained
- 1/2 cup Chopped onion
- 2 cups total (1 cup for the base, 1 cup for topping) Mexican blend cheese
- 9 oz bag Nacho Cheese Doritos

Steps
- Crush the Nacho Cheese Doritos in a bag.
- Spray a 9x13 inch dish and put most of the crushed Doritos on the bottom, saving a little bit for later.
- In a separate bowl, combine the chicken, cream of mushroom soup, cream of chicken soup, salsa or Ro-Tel, whole kernel corn, and chopped onion.
- Mix all the ingredients in the bowl until well combined.
- Pour the chicken mixture over the crushed Doritos base in the prepared dish.
- Preheat oven to 350°F.
- Bake for 20 to 25 minutes.
- Remove from the oven, sprinkle the remaining crushed Doritos and the second cup of Mexican blend cheese on top.
- Return to the oven and bake for about 5 minutes until the cheese is melted.
