Mexican Chicken Casserole

Ingredients

  • 3 cups Chicken (rotisserie or breast)
  • 1 can Cream of mushroom soup
  • 1 can Cream of chicken soup
  • 1 1/2 cups salsa OR 10 oz can Ro-Tel Salsa or Ro-Tel (diced tomatoes with green chilies)
  • 14-15 oz can Whole kernel corn, drained
  • 1/2 cup Chopped onion
  • 2 cups total (1 cup for the base, 1 cup for topping) Mexican blend cheese
  • 9 oz bag Nacho Cheese Doritos

Steps

  1. Crush the Nacho Cheese Doritos in a bag.
  2. Spray a 9x13 inch dish and put most of the crushed Doritos on the bottom, saving a little bit for later.
  3. In a separate bowl, combine the chicken, cream of mushroom soup, cream of chicken soup, salsa or Ro-Tel, whole kernel corn, and chopped onion.
  4. Mix all the ingredients in the bowl until well combined.
  5. Pour the chicken mixture over the crushed Doritos base in the prepared dish.
  6. Preheat oven to 350°F.
  7. Bake for 20 to 25 minutes.
  8. Remove from the oven, sprinkle the remaining crushed Doritos and the second cup of Mexican blend cheese on top.
  9. Return to the oven and bake for about 5 minutes until the cheese is melted.
