- 2 lbs lean ground beef
- onion

- 1/4 cup pickled jalapeño juice

- 2 tbsp cornstarch
- 3/4 cup milk

- Cook ground beef in a pan over medium-high heat until browned.
- Add spices, onion, and jalapeño. Cook for 3 minutes.
- Add Roma tomato, tomato sauce, and beans. Cook for another 3 minutes.
- Prepare nacho cheese sauce: heat evaporated milk and pickled jalapeño juice with spices over medium-low heat for 3 minutes.
- Dissolve cornstarch in milk and add to the sauce, stirring until thickened.
- Reduce heat to lowest setting and melt in cheese a little at a time until smooth.
- Assemble walking tacos in Doritos bags or bowls: layer cheese sauce, meat, more cheese, sour cream, pico de gallo, and jalapeños.
