Moroccan Fava Beans with Charmoula

Ingredients

  • 2 pounds Fresh fava beans (with skin)
  • 1 Tomato
  • 1/3 cup Finely chopped cilantro
  • 1/3 cup Olive oil
  • 3 Garlic cloves (crushed)
  • 1/2 teaspoon Salt
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin

Steps

  1. Peel the fava beans by removing the tip, splitting them in two, and removing all the seeds.
  2. In a pan over medium heat, pour the olive oil and add 1/3 cup of water. Mix until the water and oil begin to bubble, indicating the oil is ready.
  3. Add the peeled fava beans into the pan and mix slightly.
  4. Pour in the crushed garlic and then add the chopped cilantro.
  5. Finally, pour in all the spices (salt, paprika, and cumin). Mix continuously until the ingredients are homogeneous.
  6. Add enough water to completely cover the fava beans. Cover the pan and let them cook on medium heat for 50 minutes.
  7. After 50 minutes of cooking, cut the tomato in half and grate it (discard the skin).
  8. Stir in the grated tomato to add more flavor. Let the fava beans continue to cook for an additional 3 to 4 minutes while covered.
  9. Serve with Moroccan or French bread.
