Moroccan Fava Beans with Charmoula

- 2 pounds Fresh fava beans (with skin)
- 1 Tomato
- 1/3 cup Finely chopped cilantro
- 1/3 cup Olive oil
- 3 Garlic cloves (crushed)
- 1/2 teaspoon Salt
- 1 teaspoon Paprika
- 1 teaspoon Cumin

Steps
- Peel the fava beans by removing the tip, splitting them in two, and removing all the seeds.
- In a pan over medium heat, pour the olive oil and add 1/3 cup of water. Mix until the water and oil begin to bubble, indicating the oil is ready.
- Add the peeled fava beans into the pan and mix slightly.
- Pour in the crushed garlic and then add the chopped cilantro.
- Finally, pour in all the spices (salt, paprika, and cumin). Mix continuously until the ingredients are homogeneous.
- Add enough water to completely cover the fava beans. Cover the pan and let them cook on medium heat for 50 minutes.
- After 50 minutes of cooking, cut the tomato in half and grate it (discard the skin).
- Stir in the grated tomato to add more flavor. Let the fava beans continue to cook for an additional 3 to 4 minutes while covered.
- Serve with Moroccan or French bread.
