Pide (Turkish Flatbread)

Ingredients

  • 1/2 kg White flour
  • 1 tsp Salt
  • Amount needed for dough Lukewarm water (39-40°C)
  • Small amount Yeast
  • Small amount Sugar
  • 1 tbsp Butter

Steps

  1. Mix the white flour with salt in a bowl.
  2. Make a hole in the center of the flour and add lukewarm water, yeast, sugar, and butter into it.
  3. Begin mixing the ingredients by hand to form a dough. Dust your hands with flour to prevent sticking.
  4. Knead the dough for about 1.5 minutes until all small dust particles are gone.
  5. Continue kneading using both palms (roll press) to smooth the dough and develop the gluten.
  6. Divide the dough into equal portions, forming small balls.
  7. Take one portion and flatten it out by pressing with your palm, slowly decreasing pressure, then shaping the edges with your thumb and fingers until a circle is formed.
  8. Dust a tray with flour and place all the dough bases on top of a clean damp cloth. Let them rest for half an hour in a warm area (not on a cold marble counter).
  9. Preheat the oven to 280°C, ensuring both top and bottom heating elements are active without fans.
  10. Dust your countertop and rolling pin with flour.
  11. Roll out one long straight piece of dough using the rolling pin. If you don't have a baker's peel, use a piece of foil or sauce to guide it.
  12. Spread cheese (such as Kashar/mozzarella) generously over the rolled dough and close the edges slightly.
  13. Add decorations such as diced tomatoes and pepper.
  14. Place the pide on the bottom rack of the oven for 4-5 minutes until the bottom is cooked, then remove it to the top shelf.
  15. Repeat the process with remaining dough portions (this will be a cycle).
  16. For specific orders: Add eggs and peppers when they are about to go up; add other toppings like diced meat or greens as desired.
  17. Once the bottom is cooked, add final toppings such as red pepper, one egg in the middle, and black pepper.
  18. Butter the sides of the pide and return it to the oven for another 30 seconds until ready.
  19. Garnish with parsley.
