Old-Fashioned German Potato Salad

- 1 small American onion Onion

- about 4 oz Broth
- to taste Chives

- to taste Parsley (Italian)
- a little bit Sugar
- to taste Salt
- as needed Vegan bacon (optional)

Steps
- Boil the potatoes in barely covered water over low heat until just barely done, ensuring they are hot but not super soft.
- Drain the cooked potatoes and peel them while they are still hot.
- Slice the onion into small dice.
- Transfer the diced onions to a bowl and marinate them by adding oil and white wine vinegar. Stir well.
- Slice the peeled potatoes into even pieces, about half an inch thick.
- Add the sliced potatoes to the marinated onion mixture.
- In a separate measuring bowl, combine the broth with chopped chives, dill, and finely chopped parsley.
- Stir in a little sugar and salt to the herb mixture.
- Pour the dressing over the warm potato-onion mixture. Give it a good mix, breaking apart any stuck slices so the dressing coats everything evenly.
- Add the vegan bacon (if using) and stir until combined.
