Steps

  1. Boil the potatoes in barely covered water over low heat until just barely done, ensuring they are hot but not super soft.
  2. Drain the cooked potatoes and peel them while they are still hot.
  3. Slice the onion into small dice.
  4. Transfer the diced onions to a bowl and marinate them by adding oil and white wine vinegar. Stir well.
  5. Slice the peeled potatoes into even pieces, about half an inch thick.
  6. Add the sliced potatoes to the marinated onion mixture.
  7. In a separate measuring bowl, combine the broth with chopped chives, dill, and finely chopped parsley.
  8. Stir in a little sugar and salt to the herb mixture.
  9. Pour the dressing over the warm potato-onion mixture. Give it a good mix, breaking apart any stuck slices so the dressing coats everything evenly.
  10. Add the vegan bacon (if using) and stir until combined.
