Ingredients

  • 4 Large chicken breasts (boneless and skinless)
  • As needed Parchment paper
  • 1 Heavy rolling pin or meat mallet
  • A little bit per breast Olive oil (or vegetable oil)
  • 3 tablespoons Brown sugar
  • 1/2 teaspoon Cumin
  • 1 tablespoon Chili powder
  • 1 teaspoon Parsley flakes
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder

Steps

  1. Lay the four large chicken breasts boneless and skinless on a sheet of parchment paper.
  2. Cover them with another sheet of parchment paper.
  3. Use a heavy rolling pin or meat mallet to pound the chicken breasts to an even thickness.
  4. Drizzle each of the chicken breasts with olive oil (or vegetable oil).
  5. Mix the following ingredients for the rub: 3 tablespoons brown sugar, 1/2 teaspoon cumin, 1 tablespoon chili powder, 1 teaspoon parsley flakes, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder.
  6. Season the flattened chicken breasts with the rub mixture.
  7. Place the seasoned chicken in an oven preheated to 425 degrees Fahrenheit.
  8. Bake for approximately 20 minutes, or until cooked through.
  9. Cover the baked chicken loosely with aluminum foil and let it rest for another five minutes.
