- 4 Large chicken breasts (boneless and skinless)
- As needed Parchment paper
- 1 Heavy rolling pin or meat mallet
- A little bit per breast Olive oil (or vegetable oil)
- 3 tablespoons Brown sugar
- 1/2 teaspoon Cumin
- 1 tablespoon Chili powder
- 1 teaspoon Parsley flakes
- 1/2 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/2 teaspoon Garlic powder
- 1/2 teaspoon Onion powder

Steps
- Lay the four large chicken breasts boneless and skinless on a sheet of parchment paper.
- Cover them with another sheet of parchment paper.
- Use a heavy rolling pin or meat mallet to pound the chicken breasts to an even thickness.
- Drizzle each of the chicken breasts with olive oil (or vegetable oil).
- Mix the following ingredients for the rub: 3 tablespoons brown sugar, 1/2 teaspoon cumin, 1 tablespoon chili powder, 1 teaspoon parsley flakes, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder.
- Season the flattened chicken breasts with the rub mixture.
- Place the seasoned chicken in an oven preheated to 425 degrees Fahrenheit.
- Bake for approximately 20 minutes, or until cooked through.
- Cover the baked chicken loosely with aluminum foil and let it rest for another five minutes.
