Rachael Ray's 30-Minute Shepherd's Pie

Ingredients

  • 2 tablespoons Ground beef (or ground lamb)
  • 2 tablespoons Butter
  • A couple of big spoons Flour
  • 1 cup Beef stock
  • To taste Worcestershire sauce
  • About a half cup (optional) Peas
  • As needed for topping Fresh potatoes
  • A couple of scoopfuls (or softened cream cheese) Sour cream
  • As needed Heavy cream or Half and half
  • 1 large egg, separated Egg yolk

Steps

  1. In a pan, melt the butter over medium heat.
  2. Add the flour to the melted butter and cook together until it smells cooked (to remove raw flour taste).
  3. Whisk in 1 cup of beef stock into the pan mixture.
  4. Stir in Worcestershire sauce for color and flavor.
  5. Add peas (if using) to the ground beef mixture.
  6. Pour the prepared gravy over the meat mixture and mix all together until combined.
  7. Transfer the meat mixture into a casserole dish or heavy pan.
  8. In a separate bowl, combine sour cream with heavy cream/half and half and an egg yolk (or use softened cream cheese mixed with milk/cream).
  9. Using a masher, mash the fresh potatoes until smooth.
  10. Spread the mashed potato mixture evenly over the meat filling in the casserole dish.
  11. Sprinkle paprika on top of the mashed potatoes for garnish.
  12. Place the casserole under the broiler, keeping it about six to eight inches away from the heat, until the topping is golden brown.
