- as needed Yellow corn tortillas
- as needed Taco meat (ground beef, chicken, or steak)
- to taste Chipotle taco seasoning
- as needed Enchilada sauce (mild El Paso recommended)
- as needed Queso quesadilla cheese
- as desired Black olives (optional)
- as desired Jalapeños (optional)
- to taste Crema (for topping, optional)
- to taste Avocado (for topping, optional)

Steps
- Cut the yellow corn tortillas into pieces similar to tortilla chips.
- In a bowl, combine the taco meat with chipotle taco seasoning and mix well.
- Add enchilada sauce to the mixture.
- Stir in some queso quesadilla cheese, reserving extra for topping.
- Spread the entire mixture onto a sheet pan.
- Cover the top of the mixture with the remaining cheese.
- Optionally, add black olives and jalapeños over the cheese layer.
- Bake at 375°F for approximately 25 minutes until the top is nicely browned and crispy.
