Steps
- In a cast iron pan, heat a little oil over medium-high heat.
- Add 1.5 lbs of ground beef and cook until it is void of any pink (a tiny bit of pink is okay).
- While the beef cooks, warm up some refried beans in a separate pan.
- Once the ground beef is cooked through, season with garlic powder, cumin, chili powder, salt, and pepper. Taste and adjust seasoning as needed.
- Add the warmed refried beans to the seasoned ground beef mixture and stir until combined.
- Pour in 1/2 cup of beef broth and mix well; this will help thicken the mixture slightly for application on the sheet pan.
- Preheat your oven to 4.25 (the transcript says 'four and a quarter').
- Begin building the nachos by layering half of the ground beef bean mixture over tortilla chips.
- Add layers of shredded cheddar cheese, diced pickled jalapeños, and black beans.
- Repeat this process with another layer of tortilla chips.
- Top with the remaining ground beef bean mixture, followed by a combo of cheddar and Monterey Jack cheeses.
- Add more layers of pickled jalapeños and black beans if desired.
- Finish the top layer with cheese whiz straight from the jar into the microwave, then sprinkle with crumbly cotija cheese.
