Sheet Pan Nachos

Ingredients

  • 1.5 lbs Ground Beef (80/20)
  • As needed Refried Beans
  • 1/2 cup Beef Broth
  • Approx. 2 bags Tortilla Chips
  • Handful Shredded Cheddar Cheese
  • As desired Diced Pickled Jalapeños
  • As needed Monterey Jack Cheese
  • As desired Black Beans
  • Out of the jar Cheese Whiz
  • A little crumbly amount Cotija Cheese
  • To taste Garlic Powder
  • To taste Cumin
  • As needed Chili Powder
  • To taste Salt
  • To taste Pepper

Steps

  1. In a cast iron pan, heat a little oil over medium-high heat.
  2. Add 1.5 lbs of ground beef and cook until it is void of any pink (a tiny bit of pink is okay).
  3. While the beef cooks, warm up some refried beans in a separate pan.
  4. Once the ground beef is cooked through, season with garlic powder, cumin, chili powder, salt, and pepper. Taste and adjust seasoning as needed.
  5. Add the warmed refried beans to the seasoned ground beef mixture and stir until combined.
  6. Pour in 1/2 cup of beef broth and mix well; this will help thicken the mixture slightly for application on the sheet pan.
  7. Preheat your oven to 4.25 (the transcript says 'four and a quarter').
  8. Begin building the nachos by layering half of the ground beef bean mixture over tortilla chips.
  9. Add layers of shredded cheddar cheese, diced pickled jalapeños, and black beans.
  10. Repeat this process with another layer of tortilla chips.
  11. Top with the remaining ground beef bean mixture, followed by a combo of cheddar and Monterey Jack cheeses.
  12. Add more layers of pickled jalapeños and black beans if desired.
  13. Finish the top layer with cheese whiz straight from the jar into the microwave, then sprinkle with crumbly cotija cheese.
