  • 3 to 5 lbs Beef Chuck Short Ribs (boneless)
  • 7.5 oz Soda (cola, Dr. Pepper, Fanta, or grape soda)
  • 3 oz Achote paste
  • 1/2 cup Orange juice
  • Juice of 1/2 lemon Lemon juice
  • 1 teaspoon Chicken bullion
  • 1 teaspoon Sea salt
  • 1 teaspoon Black pepper
  • Half of one Cinnamon stick

Steps

  1. Preheat the slow cooker to high.
  2. In a blender, combine the soda, achote paste, orange juice, lemon juice, chicken bullion, sea salt, and black pepper. Blend until smooth.
  3. Season both sides of the beef short ribs with sea salt and black pepper.
  4. Place the seasoned meat into the slow cooker.
  5. Add half a cinnamon stick to the slow cooker.
  6. Pour the blended sauce over the meat, ensuring you clean the edges so it cooks evenly.
  7. Cook on high for about 2 hours, then switch to low and cook for an additional 3 to 4 hours.
