Steps
- Season the chicken with salt and pepper on both sides.
- In a bowl, beat 2 eggs until well combined.
- Add 2 cups of buttermilk to the beaten eggs and mix together until all ingredients are well combined.
- In a separate bowl, combine 2 cups of flour, 1 teaspoon of salt, 1 teaspoon of pepper, 2 tablespoons of garlic powder, and 1.5 tablespoons of paprika. Whisk carefully to ensure even distribution.
- Set up the dredging station with chicken pieces, the buttermilk/egg mixture, and the dry flour/seasoning mix.
- Take a piece of chicken and coat it thoroughly in the buttermilk/egg mixture using one hand (the 'wet' hand). Let excess drip off.
- Switch hands and use the other hand (the 'dry' hand) to coat the chicken with the dry flour/seasoning mixture. Toss until fully coated.
- Tap the chicken before removing it from the dry mix to shake off any extra flour.
- Place the breaded chicken pieces on a sheet pan or plate, and repeat the process for all remaining chicken pieces.
- Lightly coat both sides of the prepped chicken with olive oil spray.
- Spray the inside of the air fryer basket lightly with olive oil spray.
- Add the chicken to the air fryer basket, ensuring each piece has space around it for proper hot air circulation.
- Set the air fryer temperature to 360°F and set the timer for 20 minutes.
- Check the chicken halfway through cooking. If desired, flip the legs of the chicken.
- Continue cooking until the internal temperature reaches a minimum of 165°F.
