- 1 can or 2 cans of chickpeas Canned butter beans (low sodium)
- To taste Harissa sauce
- Amount used Sundried tomatoes in oil
- Amount used Kale (dino kale, curly kale, or spinach)
- Amount used Shallots or red onion
- Amount used Garlic
- To taste Salt and pepper
- Amount used Nutritional yeast (or plant-based parmesan)
- Amount used Vegetable broth
- Amount used Dairy-free milk (unsweetened soy, coconut, almond, or cashew milk)
- To taste Garlic powder
- To taste Red pepper flakes

Steps
- Mince the garlic and roughly chop/mince the shallots. Shred the kale and roughly chop the sundried tomatoes.
- In a skillet, sauté the shallots until softened.
- Add the minced garlic to the skillet and cook for about one or two minutes, being careful not to burn it.
- Add the chopped sundried tomatoes followed by the drained and rinsed butter beans (or chickpeas).
- Stir in the dairy-free milk and vegetable broth.
- Add the Harissa sauce to the mixture. Let it cook for a bit.
- Season with salt, black pepper, nutritional yeast (or plant-based parmesan), garlic powder, and red pepper flakes.
- Let the mixture simmer until it has thickened slightly.
- Stir in the kale or spinach and mix well.
- If desired, add more vegetable broth or milk to achieve a soupy consistency. Optionally, drizzle with coconut milk and add more Harissa sauce for extra flavor.
