Steps

  1. Let the chicken breasts come to room temperature for about 15 minutes before cooking.
  2. Try to get all of your chicken breasts about the same size. If necessary, gently pound the thicker part between two pieces of plastic wrap and use a mallet to lightly pound it for more even thickness.
  3. Mix one teaspoon of kosher salt, one teaspoon of paprika, half a teaspoon of garlic powder, half a teaspoon of dried thyme, and about a quarter teaspoon of fresh cracked black pepper together to create the seasoning mix.
  4. Lightly coat the chicken breasts with about a tablespoon or so of all-purpose oil or avocado oil on both sides.
  5. Sprinkle the seasoning mix all over the chicken and rub it thoroughly over both sides.
  6. Preheat your oven to 425 degrees Fahrenheit.
  7. Place the seasoned chicken breasts in an oven safe baking dish.
  8. Bake for 18 to 25 minutes, depending on the size of your chicken breasts. Flip the chicken halfway through cooking.
  9. Remove the chicken from the oven when it reaches an internal temperature of 160 degrees Fahrenheit (it will carryover cook to 165 degrees).
  10. Let the cooked chicken rest before slicing.
