Baked Chicken Quarters with Roasted Vegetables

  • 4 Chicken quarters
  • 2 Onions
  • 2 Bell peppers (red and green)
  • 1/2 teaspoon Chili powder
  • To cover the top of chicken Ground pepper

  • As needed Extra virgin olive oil (or rosemary infused olive oil)

Steps

  1. Preheat the oven to 350°F.
  2. In a bowl or container, combine all dry ingredients: chili powder (1/2 teaspoon), ground pepper (enough to cover the top of chicken), and salt (a few pinches).
  3. Using a fork or whisk, thoroughly mix the dry ingredients until well incorporated.
  4. Cut the onions into large pieces. Cut the bell peppers into long, thick strips (do not dice them).
  5. Arrange the cut vegetables in a baking dish.
  6. Coat the chicken quarters liberally with the prepared seasoning blend.
  7. Drizzle some olive oil over the seasoned chicken and vegetables.
  8. Place the seasoned chicken pieces on top of the bed of vegetables, arranging them to fit snugly in the dish.
  9. Sprinkle additional seasoning over the chicken before baking.
  10. Cover the baking dish tightly with foil or a lid.
  11. Bake for 1 hour at 350°F until the internal temperature reaches 168°F (it will settle around 169°F).
  12. Remove the covered dish from the oven and let it rest briefly.
  13. Increase the oven temperature to 400°F.
  14. Uncover the baking dish and return it to the preheated oven for an additional 15-20 minutes, or until the chicken skin is crispy.
