Baked Chicken Quarters with Roasted Vegetables

- 2 Onions
- 2 Bell peppers (red and green)
- 1/2 teaspoon Chili powder
- To cover the top of chicken Ground pepper

Steps
- Preheat the oven to 350°F.
- In a bowl or container, combine all dry ingredients: chili powder (1/2 teaspoon), ground pepper (enough to cover the top of chicken), and salt (a few pinches).
- Using a fork or whisk, thoroughly mix the dry ingredients until well incorporated.
- Cut the onions into large pieces. Cut the bell peppers into long, thick strips (do not dice them).
- Arrange the cut vegetables in a baking dish.
- Coat the chicken quarters liberally with the prepared seasoning blend.
- Drizzle some olive oil over the seasoned chicken and vegetables.
- Place the seasoned chicken pieces on top of the bed of vegetables, arranging them to fit snugly in the dish.
- Sprinkle additional seasoning over the chicken before baking.
- Cover the baking dish tightly with foil or a lid.
- Bake for 1 hour at 350°F until the internal temperature reaches 168°F (it will settle around 169°F).
- Remove the covered dish from the oven and let it rest briefly.
- Increase the oven temperature to 400°F.
- Uncover the baking dish and return it to the preheated oven for an additional 15-20 minutes, or until the chicken skin is crispy.
