- Cut the potatoes into one and a half inch cubes, keeping the skin on if using Yukon potatoes.
- Rinse the chopped potatoes to remove excess starch.
- Dry the potatoes thoroughly using a paper towel or kitchen towel.
- Transfer the dried potatoes to a larger baking dish.
- Season the potatoes with 1 teaspoon of salt and 1 tablespoon of olive oil, mixing until well-combined.
- Roast the seasoned potatoes in an oven preheated to 450 degrees for 30 minutes, flipping halfway through.
- While the potatoes are roasting, prepare the sauce: Roughly chop half of the fresh cilantro.
- In a heated pan, add olive oil and sauté the garlic cloves until fragrant (do not burn).
- Add 1 teaspoon of crushed red pepper flakes to the pan and mix with the softened garlic.
- Stir in about half a cup of chopped cilantro into the pan mixture.
- Mix all sauce ingredients together until combined.
- Once the potatoes are done cooking, immediately toss them with the prepared cilantro-garlic sauce.
- Transfer the tossed potatoes to a serving dish.
- Garnish the finished dish with extra crushed red pepper flakes and fresh cilantro before serving. Serve with lemon juice.
