  • as needed Yellow Yukon potatoes
  • 1 teaspoon Salt
  • 1 tablespoon (for roasting) Olive oil
  • half for sauce, half for serving Fresh cilantro
  • 3 Garlic cloves
  • 1 teaspoon (for sauce) + extra for garnish Crushed red pepper flakes

Steps

  1. Cut the potatoes into one and a half inch cubes, keeping the skin on if using Yukon potatoes.
  2. Rinse the chopped potatoes to remove excess starch.
  3. Dry the potatoes thoroughly using a paper towel or kitchen towel.
  4. Transfer the dried potatoes to a larger baking dish.
  5. Season the potatoes with 1 teaspoon of salt and 1 tablespoon of olive oil, mixing until well-combined.
  6. Roast the seasoned potatoes in an oven preheated to 450 degrees for 30 minutes, flipping halfway through.
  7. While the potatoes are roasting, prepare the sauce: Roughly chop half of the fresh cilantro.
  8. In a heated pan, add olive oil and sauté the garlic cloves until fragrant (do not burn).
  9. Add 1 teaspoon of crushed red pepper flakes to the pan and mix with the softened garlic.
  10. Stir in about half a cup of chopped cilantro into the pan mixture.
  11. Mix all sauce ingredients together until combined.
  12. Once the potatoes are done cooking, immediately toss them with the prepared cilantro-garlic sauce.
  13. Transfer the tossed potatoes to a serving dish.
  14. Garnish the finished dish with extra crushed red pepper flakes and fresh cilantro before serving. Serve with lemon juice.
